Here in Oregon it is officially rainy season. The cooler temperatures and endless rain will be with us for the next several months. Of course after the heat of the summer, we are all welcoming the cooler temperatures. I’d pass on the rain myself, but it comes as a package deal.

I love to layer up with cardigans, boots, and a scarf. Even with all of those layers, the Oregon rain gets to me. Maybe it is the combination of the rain, the cold, and the lack of sun; but after a day in the rain, I need something to help warm me up.

How To Use Better Than Bouillon Chicken Base

I have been using Better Than Bouillon for years in place of bouillon cubes or boxed chicken broth. It’s really easy to use. FYI: Chicken base is a concentrated form of chicken broth that can be found as a paste. To make broth: 1 teaspoon of chicken base + 1 cup hot water = 1 cup of chicken broth

Isn’t that so much easier than spending hours making broth from scratch?  Best of all, Better Than Bouillon don’t expire quickly like traditional broths once opened and it isn’t grainy like the cubes. Plus it tastes WAY better.

PS. You can also use the base undiluted as a marinade!

The Easiest Chicken Noodle Soup

 1 tbsp olive oil
 6 cloves of garlic
 1 yellow onion, diced
 2 carrots, sliced into rounds
 2 celery stalks, diced
 6 cups Better Than Bouillon chicken broth
 1 tsp fresh chopped rosemary
 1 tsp fresh chopped thyme, stems removed
 fresh ground black pepper
 1 cup pasta (ditalini, elbow, or other small noodle)
 chicken breast and thigh meat from rotisserie chicken, shredded
  cup frozen peas

Better Than Bouillon Chicken Broth

Add 6 tsp Better Than Bouillon broth base to 6 cups of warm water.

Place a large dutch oven or pot over medium high heat and add in oil.

Once oil is hot, add in garlic, onion, carrots and celery; cook for a few minutes until onion becomes translucent.

Next use garlic press, to crush garlic.

Add in chicken broth, rosemary, thyme, and pepper.

Bring soup to a boil, then stir in pasta.

After pasta has cooked for 5 minutes, add in shredded rotisserie chicken.

Stir in frozen peas.

Taste and adjust seasonings as needed.
